Simple Slaw with a Spicy Option

I bought a head of organic cabbage last week with the idea of making coleslaw. I do not like creamy coleslaw with lots of mayo, so I went to the internet with the goal of finding a simple recipe using vinegar instead and came up short handed. So I decided to experiment and scored a super simple slaw recipe with a spicy variation!

Simple Slaw

4 cupsĀ  shredded cabbage

2 cups shredded carrots

1/2 cup vinegar (I used a mix of apple cider and herb vinegar from Vom Fass)

1/2 teaspoon salt

1/2 teaspoon or more Paprika ( I use Hungary Half-Sharp from Penzey’s so it has a bit of a kick to it.)

Garnish – Home Sprouted Bean Sprouts

Chopped Peanuts

This simple slaw met with my approval and a reasonable thumbs up from my son although he added that is was a bit too vinegary. I had a half a head of cabbage left, so I decided to experiment again with another batch.

Simple Slaw with a Spicy Kick

Start with same recipe as above and then add.

2 Tbsn Peanut Butter

1 Tbsn Sesame Oil

Dash of Cayenne

This version was more appealing to our family as we tend to like spicy food. Even Derrick gobbled it up and asked “What’s in this?” as he scooped a second helping.
